feat: extract gaming config into dedicated gaming.nix module
Moves steam, gamemode, DualSense udev rules, and gaming packages
(lutris, winetricks, wine, dxvk, vkd3d-proton, mangohud, dualsensectl,
protonup-qt, prismlauncher) into gaming.nix. Also adds bluetooth/blueman
config to configuration.nix.
